Summer is finally here! Woo-hoo.

Well, okay, officially, we have a couple more days but I mean, it's basically here, so I'm calling it summer.

Every year I seem to think that once the kids are out of school life is going to somehow slow down and every year I am sorely mistaken.

This summer, I'm not going to fool myself.  I know that once school lets out, life is going to be just as crazy.  I'll be chauffeuring the kids to and from camps and play dates.  We will be spending endless days at the beach.

Something I've been doing the last few months to save time is using Walmart Online Grocery Pickup.  This is my favorite grocery pickup service and I have tried a few.  I love that there is NO FEE and also tipping is not allowed.  How great is that?  That made me sound cheap didn't it?  I just don't like the stress or the hassle of trying to calculate a tip, that's all.  

I just place my order online and choose my pick up window.  When my order is ready to be picked up, I get notified and when I arrive they come right out with my groceries. There are markings showing me where the pick up area is and designated parking spots.  It's pretty easy.  I don't even have to get out of my car.  They do the work!

In addition to the Smithfield Applewood Smoked Bacon Pork Filet, I also ordered green beans.  Remember that awesome green bean recipe I shared a few weeks ago?  Well, I was pretty psyched I was able to transform it into a recipe that can be prepared on the grill.  So, this entire meal was prepared on the grill!  Awesome, right?  I know! There is so much less clean up with grilling than cooking indoors.

If you are looking for a starch, you could also throw some potatoes (also available thru Walmart Online Grocery Pickup) on the grill too, with the same ingredients I coated the beans in but honestly, I didn't miss a starch.

Mix together oil, garlic, salt & pepper

Toss beans in oil mixture, being sure to coat all beans

Here's the thing when grilling certain veggies, they can slip through the grates.  I would recommend either a cooking mat or a veggie basket.  I prefer the mat in a recipe where there is a lot of oil to avoid major flames, but I have done it both ways.

This 30 minute meal of Grilled Pork Loin with Grilled Green Beans is cooked totally on a grill so easy clean up after a busy day.

  • 1 Smithfield Applewood Smoked Bacon Pork Loin Filet
  • 12 oz green beans trimmed
  • 2-3 cloves garlic I love garlic so I use 3
  • ¼ C olive oil
  • 1 teaspoon coarse sea salt
  • ½ teaspoon coarse ground pepper

  • Preheat grill to a medium flame.

  • Place pork over flame.  Cook until good grill marks appear (should just take a few minutes).  Flip over until grill marks appear on other side.  Reduce heat to a medium/low temperature, close cover and cook, turning occasionally, until desired temperature is achieved (I go for a safe 150 F).  Set aside to rest.

  • While pork is cooking, mix together oil, garlic, salt and pepper.  Toss beans in mixture.  When pork is almost done cooking, add beans to the grill (on a veggie basket or grilling mat).  Toss occasionally until tender crisp, about 5-7 minutes.

  • After pork rests for at least 5 minutes, slice and serve with beans.
