Between managing four children’s schedules and work ramping up with the holidays, life IS crazy!  Let’s be honest, with four kids life will always be crazy.  The cooler weather and the shorter days just make it all seem a little bit more rushed though, doesn’t it?

Regardless of the excuse, dinner seems to sneak up on me with speed, so I’m turning to my slow cooker to crank out easy family suppers.  That’s where Smithfield Marinated Fresh Pork comes in! In this Slow Cooker Pork Loin with Fall Veggies recipe, I’m using Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet.  Because it’s already seasoned, I don’t have to do much to coax out tons of flavor.  In this version, I added leeks, carrots and mushrooms to the slow cooker, but you can mix it up for what you have on hand or like.  Potatoes, green beans, brussels sprouts and onions would also all be delish!

If you haven’t read my blog post, “Crock Pot Cooking, Why You’re Doing it Wrong” start there.  It goes into how and why searing the meat, making a sauce of the browned bits, and then cooking the meat is the best way to get the most from your slow cooker supper.

So yes, we’re going to start with browning the meat, because it gets such a great crust on the outside that I think makes this dish.  If you have a cooktop safe slow cooker insert, use it.  Otherwise, it’s worth dirtying up a second skillet.  Add a splash to oil and bring the skillet to medium-high temperature.  Add pork loin and sear on all four sides until you get a deep golden color.  It will not be cooked through.

Remove the meat from the skillet and pour in about a 1/2 cup of stock.  Using a wood spoon, scrape up the browned bits until the pan is “clean.”

Place the veggies in the slow cooker and rest the pork on top.  Pour the pan sauce on top.  Cook over low heat for 6-7 hours, or until meat is tender.

Remove the meat to a cutting board and place the veggies in a bowl.  Allow the meat to rest at least five minutes before slicing.

Pour the remaining juices from the slow cooker through a sieve into a saucepan.  (This step is also covered in the slow cooker article mentioned above.) Whisk together 2 Tb. cornstarch with an additional 1/2 cup stock.  Pour into the saucepan.  Bring to a simmer over medium heat and continue cooking until you have a nice and thick gravy.  Serve the gravy with meat, veggies and garlic mashed potatoes.

  • 12 oz. baby carrots
  • 8 oz. baby mushrooms
  • 1 medium leek, cleaned and chopped
