The handbook was written by Dr. Gerald (Jerry) Shurson, Professor of Animal Nutrition in the Department of Animal Science at the University of Minnesota. Professor Shurson is world renowned for his team’s research on assessing the nutritional value of feed fats and oils for swine and poultry, as well as the effects of lipid oxidation on animal health and performance.
