(spoilers!)Because of frustration. He thought he will die of cancer and he wanted to do the most amazing life-ending shit ever but it was going to do it for some seasons until he dies.
He made the decision to cook meth (and the consequences that came along with it) because he had cancer and wanted to leave his family money after he died. After he found out he was going to live he was angry he did it for nothing. or He liked the sense power cooking meth gave him and accepted that his goal was to do well with it and then die.
