6 to 8 lb pork loin roast, center-cut
2 Tbsp Dijon-style mustard
2 Tbsp margarine
1 Tbsp brown sugar
1/2 Tbsp ground black pepper
1 tsp thyme, crushed

Instructions:

  1. Preheat NESCO® Roaster Oven to 400ºF. Lightly wipe cookwell with cooking oil. Add margarine; cover, cook until melted.
  2. Arrange pork roast in preheated cookwell. Cover; roast 10 minutes. Reduce temperature to 325ºF.
  3. Combine remaining ingredients. Remove rack with meat to a heatproof surface. Spread mustard mixture over roast. Set rack in cookwell. Cover; roast 2 to 2 ½ hours (170ºF on meat thermometer). Serves 10 to 12.

Through much of Central and Eastern Europe, pork and sauerkraut forge a most traditional partnership. They're a natural combination, with the tart acidity of the sauerkraut providing a foil to the richness of the pork. It's an especially appealing combination when the two are slow-cooked together, mellowing the sauerkraut and giving the pork a richly luscious texture. A countertop electric roaster is ideal for preparing a large batch without heating your kitchen.

Step 1

Place the cooking insert in your electric roaster, if necessary. Arrange the sauerkraut, onions, apples and any other flavoring ingredients into a layer along the bottom of the roaster.

Add the white wine, juice, beer or broth, if you're using it, and then place the pork shoulder on top of the sauerkraut.

Cover the roaster with its lid, and set the temperature to 300 F.

Slow-cook the sauerkraut and pork shoulder for three to five hours, depending on the size of the roast. It's fully cooked when it reaches an internal temperature of 145 F when tested with a meat thermometer or instant-read thermometer, but for the traditional fork-tender consistency it should reach an internal temperature of 180 F or higher.

Step 5

Remove the roast to a serving platter and let it rest for at least 10 to 15 minutes before serving. Surround it on the platter with sauerkraut, and serve it with boiled or mashed potatoes.

This is a great way to cook 4 a crowd without heating up the house for an extended period of time, or to allow you to free up your oven to cook other things, especially during the holidays. I made 2 of these roasts & gave one to my neighbor & her family. The key to this wonderfully tasting tender roast is to cook low & slow for an extended period of time to allow all of the spices to linger in the crevices of the meat Marinating over night also enhances the flavors of the spices. The liquid creates moistness through out the meat during it's extensive period of cooking. Hope you try it.

Ingredients For table top roasted pork butt roast

  • SPICE BLEND FOR MEATS( BEEF/PORK 0R CHICKEN)
  • 1/4 c

    granulated garlic (good quality)

  • 2 Tbsp

    granulated onion spice

  • 2 Tbsp

    ground cumin, heaping full

  • CITRUS FRUIT& OTHER INGREDIENTS FOR THE ROAST

    navel oranges, sliced

  • 2 md

    each limes &lemons, sliced

  • 32 oz

    beef broth or chicken broth

  • 8-9 lb

    pork shoulder roast (bone in)

How To Make table top roasted pork butt roast

    Wash the roast & pat dry with paper towels. PLEASE NOTE THAT YOU CAN COOK THIS ROAST IN THE OVEN OR EVEN ON THE GRILL IF DESIRED.

    Then using a sharp knife, make deep gashes into the roast on the fat side, this allows the spices to penetrate the roast. Stuff slivers of garlic cloves into the roast for added flavor if desired. The fat prevents the roast from drying out during it's long cooking time in the oven.

    Combine the spices and season the roast liberally on all sides.MAY NOT USE ALL OF THE SPICES. Store roast in a 2 gallon reclosable bag & refrigerate overnight. Marinate overnight if possible. Or at least an hour or two to allow spices to penetrate the meat. Bring roast to room temperature on the counter top before placing in roaster. This helps to start cooking at an even temperature.

    Preheat roaster oven to 350 degrees. Or follow directions for your roaster oven. Slice fruits and onions into thick slices.

    Using a meat rack add a variety of the slices of fruit, onion and garlic cloves on the bottom of the rack. Then top with the seasoned roast BE SURE THE FAT SIDE IS ON TOP(UP).THIS WAY THE FAT PENETRATES THE MEAT AS IT COOKS. Add the remaining fruit slices, throw in the bay leaves, and pour in the beef or chicken broth along the perimeter of the roaster. Cover the roast with a lid and continue to cook until meat is fork tender, and bone can be pulled away from the meat with your fingers.

    NOTE COOKING TIME VARIES, DEPENDING ON THE SIZE OF THE ROAST. i COOKED 2 AT ONE TIME FOR A TOTAL OF JUST OVER 20 POUNDS, AND REQUIRED A TOTAL COOKING TIME OF 9 HOURS & 40 MINUTES.

    Once roast is fully cooked, allow to cool, remove the bone. I was able to remove the bone by pulling it from the roast, with very little resistance after the 9 hours and 40 minutes cooking time.

    Now shred with 2 forks, or slice with an electric knife. I chose to slice with an electric knife. I gave one of the roasts to my neighbor and her family.
