Ingredients

  • 3-4 lb pork loin roast
  • 2 Tbsp olive oil
  • 1 Tbsp salt
  • 1 Tbsp black pepper

Instructions

  1. Preheat oven to 400°F.
  2. Rub olive oil on all sides of roast, then rub on salt and pepper.
  3. Place pork loin fat side up in roasting pan, then put in pre-heated oven.
  4. Bake 20 minutes per pound, or until internal temperature of roasts reaches 145°F when measured with a meat thermometer.
  5. Remove from oven, tent with foil, and allow to rest 10 minutes before carving.
